Sailor Jerry’s spiced rum with pineapple syrup, grapefruit bitters, fresh lemon juice and angostura bitters. Garnished with a pineapple leaf and cherries.

The Beach

10 Cane rum, mango puree, fresh root ginger, maraschino liqueur, fresh lime juice and sugar syrup. Shaken and served short over ice, garnished with a lime wheel and grenadine swirl.

Peach Embargo

Bacardi Superior rum, fresh peach slices, fresh lime juice and sugar syrup with a dash of peach liqueur all blended with ice and served frappe.

Sapphire Sunrise

Bombay Sapphire gin shaken with fresh chunks of watermelon, basil, fresh lime juice and sugar syrup. Served straight up in a chilled martini glass and garnished with chunks of watermelon and basil.

Mexican Sorbet

Hornitos tequila blended with Cointreau, lemon sorbet, cinnamon syrup and fresh lime juice. Served straight up in a rocks glass with a wedge of lime and dusting of cinnamon.

Tangerine Scene

Absolut Mandarin vodka muddled with tangerines, fresh lemon juice and sugar syrup then topped up with Old Jamaican ginger beer. Garnished with a root ginger wheel and lemon wedge.

Bacardi Superior or Havana Club Especial rum, mint, brown sugar and fresh lime juice. Served long over crushed ice, topped with soda, garnished with mint and a lime wedge.

Appleton’s Estate V/X rum, Koko Kanu rum, pineapple juice, blended with coconut cream and garnished with an orange slice and pineapple leaf.

Zombie

A punchy mix of Santa Teresa Gran Reserva rum, Gosling rum, Wray & Nephew Overproof rum, apricot brandy, fresh lime juice, pineapple juice, orange juice and sugar syrup, served long and garnished with a pineapple leaf and dusting of cinnamon.
